Skim Milk Cheeses
The butterfat content of
cheese—that is, the amount remaining in the cheese solids after all
moisture has been removed—varies according to whether the cheese has
been made with whole milk, skim or part-skim milk, or enriched milk.
Skim-milk cheese has a butterfat content of 0.5 percent or less. |

Goat Cheese
For years, people with sensitive
stomachs have opted for goat milk products. The fats in goat cheese
are smaller with short-chain fatty acids and produce a softer curd.
Their small size makes them easier to break down and digest than the
larger, long-chain fatty acids of cow's cheese. Goat cheese has the
added benefit of not containing bovine growth hormones. |

Sheep Cheese
Sheep cheese is usually aged,
rendering it mild and firm enough to qualify for the hard cheese
category. Aged sheep cheeses typically have a touch of nuttiness and
only a little of the characteristic tang of their origins. |

Curds
Cheese curds are fresh, young cheddar cheese in the natural, random
shape and form before being processed into blocks and aged. (Cheddar
cheese is typically aged from 60 days to 4 years before being sold.)
Unlike the aged variety, curds lose their desirable qualities if
refrigerated or not eaten for a few days (the squeak disappears and
they turn dry and salty) |
